What is the waterproof rating of the kids phone watch? Can it be worn while swimming?

The imoo Z7 tracker watch has a 20-meter water resistance rating. It is suitable for shallow water activities like swimming in a pool, but not suitable for diving or high-pressure water activities (e.g., diving, hot showers).
Please note: If the SIM card cover or casing is damaged, the waterproof performance may be affected. Therefore, before submerging the device in water, please ensure that the SIM card cover is securely installed.
After contact with water, please wipe the microphone and speaker openings dry with a cloth.

How do I charge it correctly? What if it doesn’t power on for the first time?

Align the magnetic charging contacts on the cable with the charging contacts on the back of the kids gps watch. The screen will display “Charging…” when correctly connected. Be sure to use a CE-certified 5V/2A adapter. If a new watch won’t power on, the battery may be depleted; it will turn on automatically once connected to the charger.

Which operator's SIM card should I choose? Will a SIM card from MVNO be compatible with the watch phone?

Reject calls from strangers: imoo APP-More-Reject Unknown Calls. Unable to answer calls from contacts: delete the extra 0 after the area code of the contact saved in "watch phone's Contacts".
